Cochinita Pibil: El Sabor Tradicional de Yucatán
La cochinita pibil es uno de los platillos más emblemáticos de la cocina yucateca. Tradicionalmente, se prepara con carne de cerdo marinada en achiote y cocida lentamente para lograr un sabor profundo y especiado. Aquí te comparto cómo hacerla paso a paso para que puedas disfrutarla en casa.
Ingredientes
• 1 kg de carne de cerdo (pierna, paleta o lomo)
• 100 g de pasta de achiote
• 200 ml de jugo de naranja agria (o una mezcla de jugo de naranja dulce con jugo de limón)
• 100 ml de vinagre blanco
• 4 dientes de ajo, pelados y picados
• 2 hojas de laurel
• Sal y pimienta al gusto
• 1 hoja de plátano (opcional, para un toque auténtico)
• Cebolla morada encurtida, tortillas de maíz, limón y chiles habaneros, para acompañar
Instrucciones
1. Marinar la carne: Disuelve la pasta de achiote en el jugo de naranja agria, vinagre, ajo picado, sal y pimienta. Cubre la carne de cerdo con esta marinada, asegurándote de que esté bien impregnada. Déjala reposar en el refrigerador por al menos 4 horas, idealmente durante toda la noche para maximizar el sabor.
2. Preparar para hornear: Precalienta el horno a 160°C. Coloca la carne marinada en una bandeja para hornear. Si usas hoja de plátano, enjuágala bien, pásala por la flama para ablandarla y envuelve la carne con ella, lo que ayudará a mantener la humedad y aportará un sabor extra.
3. Cocción lenta: Cubre la bandeja con papel aluminio para sellar bien y cocina la carne en el horno durante 3-4 horas, o hasta que esté tan tierna que puedas deshebrarla fácilmente con un tenedor.
4. Deshebrar y servir: Una vez cocida, deshebra la carne y mézclala con su jugo para que absorba más sabor. Sirve la cochinita pibil en tortillas de maíz, acompañada de cebolla morada encurtida, limón y chiles habaneros asados para un toque picante.

La cochinita pibil es uno de los platos icónicos de la gastronomía mexicana junto al mole, las carnitas y los tacos al pastor. Esta versión elaborada por el chef Wilson Alonzo presenta características únicas; primero porque está elaborada de manera artesanal, con técnicas ancestrales y en una cacerola de barro a diferencia del muy común recipiente de metal rectangular conocido como lata.
El resultado final es un producto suave, con notas de barro y humo, con profundos aromas de la tierra proveniente de las maderas y hojas utilizadas para todo el proceso, y con una intensidad que difiere de las preparadas comúnmente en ciudades yucatecas más grandes, o incluso en otras partes de México.
Esta versión aprovecha las virtudes de la carne magra de la pierna cocinada y un toque de grasa de la costilla que queda en el fondo de la cacerola. El bocado se vuelve virtuoso ya que es húmedo, tiene sabores intensos de tierra y humo, y permite una degustación adecuada.

✿ コチニータ・ピビル | Cochinita Pibil ・コチニータは豚肉、ピビルは先住民族の言葉で石のオーブンを指します。豚肉をアチョテ、酢、唐辛子で煮込み、バナナの葉に包んで石蒸しにしたユカタン地方の伝統料理です。南太平洋のロボ料理と作り方が似ていて、ピブ(PIB)と呼ばれる地面に掘った穴に焼いた石を入れ、竜舌蘭(テキーラの原料)の葉を被せて蒸し焼きにします。 スパイスを使ってじっくりと蒸された豚肉は脂身が少なく、柔らかくほろほろに崩れます。 いろんな味が混じり合った美味しくもヘルシーな料理です。

The crush-eradication mission I mentioned some time (probably several times) previously is, unsurprisingly, neither going smoothly nor as planned. But never fear. I am determined. I started reading about ‘limerence’, a term someone coined for obsessive infatuation, and the takeaway seemed to be that if one’s life is meaningless and chaotic, it’s only natural to latch on to some attractive and commensurately unavailable person to give yourself the dopamine hits. Sure, that tracks. For good measure I asked a friend how to remedy this, he opined that it probably had something to do with self-love. Okay. I decided that meant I should de-lint my fancy black coat and start being the sort of fashionable person I enjoy checking out at the MRT station. For good measure I wore it to my latest check-up (finally they’ve cut me free from the weekly visits, I go back again in two months), took myself out to dinner at a Mexican place that transported me back to my days in the Yucatán, and despite going all the way home and laying down first ‘just to digest a bit’ (a dangerous activity), actually got up again and went out.  As in alone, to a venue with night-time activity. To be fair it was an event shared by a friend, so I was fairly certain that I might recognize someone, and could also hide in a corner if I didn’t. I gambled well, had both a non-alcoholic beverage and a nice chat with a couple people I knew, and then talked to a stranger who was not the bartender. (I had to know where s/he got that funky cat-patterned shirt that said 貓 on it, the exchange did not go beyond this but I had achieved my goal.) Around 22:30 it was too loud and my sources of conversation had been exhausted, so I went home and was in bed before midnight! Yes. A successful socialisation. If I can keep this up, rehabilitation might be on the horizon too.

On another note, what would it be like if Reader was a Latina?
Like, she would curse under their breath in Spanish if she got annoyed or she would say something to Alastor in Spanish, instinctual or not, like “Mí Amor” (My Love) or “Mí Vida” (My Life)
Or, like, even curse out someone in Spanish,
for example, when Victor wasn’t leaving when they both were at Alastor’s door at the fire, or even when Trey went to go 'Talk' with Reader in the paramedics van,
(or generally any situation, It doesn’t even have to be all angsty like that, Idk, I’m not a writer, lol)
Generally, she just says stuff in Spanish and it can be instinctual, or it can just be that she just wants to
Maybe even teaching Alastor (or generally anyone else) some words in Spanish, if they’re willing or are just curious
MAYBE EVEN SHOW ALASTOR SOME FOOD OF HER CULTURE!!! (I’m sorry, I’m getting way too excited, I’m Hispanic, and I’ve just been wondering, for quite a while, what it would be like if Reader was any sort of Spanish culture) Again, I truly love this story, and I can’t wait to see more!!!

Now, now, if you were a latina, Alastor would want to learn everything about your culture from a very young age. When he was a child, it was mostly childish curiosity. Why couldn’t he understand you when you were talking with your mother in a language he couldn’t understand? Would you teach him so he could speak like that with his mother and his father would never understand them?
Alastor is intelligent so he would catch some sentence without you being aware of it. You would be having a tantrum with your mother and Alastor would take your hand, speaking in perfect spanish. 
“ Cálmate, eres demasiado ruidosa.”
Your mother and yourself were so shocked Alastor thought he made a mistake but when you jumped on him with a big smile he would let out a sigh of relief. Your mother and Marie would be surprised, Alastor was only 9 years old and he already could understand most of the words you were saying.
As he grew older, his curiosity with your culture and language became less… innocent. His obsession was the main cause of it, of course. But as an adult, he would be almost completely fluent in Spanish and knew most of your culture.  He also enjoyed the attention of course which made you repeat to him so many time:
“ A donde te quieren mucho no vengas a menudo.” 
He loved your food, the spices would almost make him moan of delight. Give the man Cochinita Pibil or Tortas Ahogadas, please, he is salivating. You both would spend so much time in the kitchen trying new recipes.
Alastor loved when you were so mad you would switch languages. Even more when you were in front of John who couldn’t understand anything you were saying.
“ ¡Háblame una vez más, te reto y te colgaré delante de toda Nueva Orleans, hijo de puta!”
“ Alastor… What is she saying..?”
“ Oh, she wants you to keep talking.”
Your best friend Alice would learn the language to gossip with you 100%. Sometimes Alastor would join the two of you and you would have three people in a coffee shop, gossiping in spanish.. Even if sometimes it would be so obvious who you were talking about.
“ Mira a esa perra.” Spat Alice which made you and Alastor turn around. You were already joining Alice in her harsh words as Alastor smirked before drinking his coffee before speaking.
“ ¿No es ella profesora de español?”
“ …”
He enjoyed your accent. He had a list of words that he loved hearing from your mouth. He didn’t know why but when you were stuttering on those words, he would smile, finding you so cute.
He would smile when you would call  him “ Mi Vida.” more than “ Mi Amor”. The fact that you saw him as your whole life made him lightheaded.
When Alice was born, he would ask you if you wanted to teach your daughter your language. No matter if you wanted it or not, Alastor would be happy with your choice. If you didn't want to share your culture and language with your daughter, that meant it was something secret between the two of you.
If you wanted it, he would be confused about the warmth inside his chest when you were teaching your daughter some words and you would hug her when she had the words right. He would find himself smiling when your daughter had the same accent as you and would stutter on the same words as you do.
